Hefeweizen is a traditional German wheat beer, cloudy from unfiltered yeast still in suspension (hefe means "yeast" in German), with a distinctive banana-and-clove aroma that comes specifically from the wheat yeast strain rather than from any added fruit or spice. It's light-bodied, low in bitterness, and usually 5-5.5% ABV, with a soft, bready wheat character underneath the yeast-driven aroma. That banana-clove signature is what separates it from other wheat beers like Witbier, which uses a neutral yeast and gets its character from added coriander and orange peel instead.
