A revival we needed. We love this beer as much as anyone, and we could not keep it dead any longer. We birthed Hawkbill as our first east coast tale, many years ago. As the years passed it has become swallowed by the emergence of new practice, science and hop selection. We last made it in 2020, allowing us to mold some new allegories of hop savagery. But the installation of our new centrifuge downtown made it possible to bring it back. And we did so with a vengeance. Double dry-hopped with select Mosaic, Galaxy, El Dorado and Columbus Cryo. Squeezed of tropical skittles, tangerine flesh and passionfruit puree.
